Stuffed courgette flowers

INGREDIENTS
FOR 4 PEOPLE
  • 12 courgette flowers
  • 200 grams of cow's ricotta
  • 2 medium carrots
  • 2 medium courgettes
  • 1 medium sized potato
  • 1 sprig of coriander
  • 2 tablespoons grated parmesan cheese
  • Salt and pepper to taste

Preparation procedure:

Wash the courgette flowers

Open the petals gently and remove the pistil without breaking them

Boil the vegetables and mash them with a fork

Combine ricotta, salt, pepper and chopped coriander.

Mix the mixture

Fill the flowers and place them in a baking tray

Sprinkle them with parmesan cheese

Cook for 10 minutes at 180 degrees
