Late Summer Stuffed Lemons

INGREDIENTS
FOR 4 PEOPLE
  • 4 lemons of the same size
  • 1 bunch of basil
  • 1 bunch of parsley
  • 1 hard boiled egg
  • 4 tablespoons cream cheese
  • 150g of natural canned tuna
  • 1 tomato

Preparation procedure:

Cut off the tops of the lemons, which you will keep aside, and empty them.

Put all the ingredients in the blender. Add a spoonful of EVO olive oil. Blend until you get a creamy mixture.

Using a pastry syringe, fill the lemons with the mixture, cover them with the top part removed previously and let them rest in the fridge for 2 hours. Decorate with pieces of tomato.

Dry the inside of the emptied lemon with absorbent paper to prevent the mixture from becoming liquid and bitter.
