
Mimosa Cake
INGREDIENTS
FOR 6 PEOPLE
- 2 small sponge cakes
FOR THE FILLING
- 2 eggs
- 2 tablespoons sugar
- 1/2 liter of milk
- 1/2 litre of whipping cream
- 2 level tablespoons of flour
TO WET THE SPONGE CAKE
- 1/2 glass of Elleboro IGT Toscana white wine
- 1/2 glass of limoncello
- 1 tablespoon sugar

Preparation procedure:
In a non-stick saucepan, mix the milk, sugar and lemon zest while cold.
Cook over low heat and gradually add the beaten eggs with the flour, stirring continuously until you obtain a thick mixture.
Whip the cream and add it to the very cold cream
Cut 1 sponge cake horizontally into 3 discs
Wet the first disc with the sweetened wine and limoncello liqueur
Spread 1/3 of the cream and continue with the other layers, finishing with the sponge cake.
Cover the cake completely with a thin layer of cream
Cut the inside of the second sponge cake into tiny cubes and make them stick to the surface of the cake

For those who want to prepare the sponge cake at home, I suggest adding a teaspoon of turmeric to accentuate the yellow of the pastry and make it more similar to that of mimosas.
